Sodexo is currently seeking an Executive Chef 3 of Food Services to join our team at Stanford University Hospital , located in Palo Alto, California. This position will report directly to the Operations Manager and will be responsible for day to day oversight of all culinary operations and productions. Stanfor! d University Hospital is a world renowned academic medical cen! ter situated in Palo Alto between San Francisco and San Jose. The hospital has 600 beds, over 2000 nurses and 2000 medical staff. The mission of the hospital is to care, to educate and to innovate. The vision of the hospital is âHealing humanity through science and compassion one patient at a time.â Food Service is a shared service for both Stanford Hospital and the adjacent Lucile Packard Childrenâs Hospital (235 beds). We provide patient dining, retail café operations and onsite catering services.
Position Information:
Manages 25 employees at this high profile, fast paced account.
Oversees food service production for 1,200 patient meals and 3,000 plus retail transactions per day plus executive dining and catering.
Supervises Executive Sous Chef for the âAt Your Requestâ patient meal service.
Oversees food service production for catering department.
Manages and controls food cost issues and offers solutions on other items for ! the client.
Manages the Food Management System (FMS) and all Sodexo goal check standards.
Provides training and coaching to the culinary team.
Responsible for growing relationships with key client contacts as well as collaborating and with the client and General Manager on achieving annual operational projects and goals.
Ensures compliance with Sodexo Culinary standards including recipe compliance
Ensures compliance to food safety, sanitation, and overall workplace safety standards at all levels.
Candidates must have demonstrated experience supervising a culinary team, an exceptional human resource skillset and the ability to effectively communicate to multiple audiences. Must be able to multitask and have proven effectiveness in a high volume, fast paced healthcare environment. The ideal candidate will have working knowledge of Sodexo Food Management Systems (FMS) or understanding of forecasting, cost management, purchasing, inventory and labor! management concepts is a must. Ability to successfully lead and develo! p a team as well as the ability to creatively and effectively problem solve and manage projects is desirable. The ideal candidate must have proficient computer skills, exceptional organizational and customer services skills. Ideal candidates will have a passion for culinary arts and a strong understanding of wellness and culinary trends. Must be ServSafe certified and experience working in a union environment is desirable.
Position Summary:
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manage! s/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements:
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 3 years
Basic Functional Experience - 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
